I came to a realization today. Not one that will shatter the earth or even matter to anyone besides me. But, like it says on the top of my blog; I write about things that are important to me.
Anyway, I went to the store to get containers of all different sizes because my mother-in-law was at the house cleaning out the toy closets today (she volunteered to keep the kids home with her while I ran the errand). I was starving so I decided to go next door and pick up a slice of pizza from one of the local kosher pizza shops (hint: it has been open for 20 years; incidentally, I was there the day it opened). I got the slice and a small soda to go and I ate the piping hot pizza in the car on the way home.
I have to say this. The pizza was awesome. It was crispy the way I like it, hot, and tasty (I am really not being sarcastic). I started thinking and realized that I can't remember the last time I had truly fresh pizza. We either order in pizza that tastes like salty, cold rubber by the time it gets to the house or if we go out, I am usually so busy taking care of the kids' needs that by the time I sit down for my slice it is cold and soggy.
This is not a gripe, just an observation. I wonder when I will have fresh pizza again...
One possibility would be to bribe a relative with, oh, I don't know, maybe some spare ribs, and then he (or she, we're speaking in generalities here, of course) could show you how to make a fine pizza crust (which interestingly enough involves potatoes, and a pizza stone), in which case you could whip some up whenever the mood strikes.
Just a thought.

The crumb (the texture of the inside) is dependent upon several days of aging, both of the the sponge (what the Bible refers to as se'or, frequently and horrifyingly mistranslated as sourdough) and of the dough.
